Twice Cooked Potatoes

- 4 large potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 cup grated Parmesan cheese
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes and pierce them with a fork. Rub with olive oil, salt, and pepper. Place on a baking sheet and bake for 45-60 minutes until tender.
- Remove the potatoes from the oven and let them cool slightly. Cut them in half lengthwise and carefully scoop out the flesh, leaving a thin layer inside the skins.
- In a bowl, mix the potato flesh with garlic, paprika, and Parmesan cheese. Season with salt and pepper.
- Stuff the potato skins with the mixture and return to the oven for 15-20 minutes until golden and crispy.
- Garnish with chopped parsley before serving.
