  • 2 tablespoons olive oil

  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and pierce them with a fork. Rub with olive oil, salt, and pepper. Place on a baking sheet and bake for 45-60 minutes until tender.
  3. Remove the potatoes from the oven and let them cool slightly. Cut them in half lengthwise and carefully scoop out the flesh, leaving a thin layer inside the skins.
  4. In a bowl, mix the potato flesh with garlic, paprika, and Parmesan cheese. Season with salt and pepper.
  5. Stuff the potato skins with the mixture and return to the oven for 15-20 minutes until golden and crispy.
  6. Garnish with chopped parsley before serving.
