  • 1 1/2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup plain Greek yogurt

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, combine the melted butter, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until well combined.
  4. Add the mashed sweet potatoes to the wet ingredients and stir until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
