- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour

- 1/2 cup plain Greek yogurt
Instructions
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, combine the melted butter, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until well combined.
- Add the mashed sweet potatoes to the wet ingredients and stir until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the Greek yogurt until evenly incorporated.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
