- 200g cream cheese
- 60g unsalted butter
- 100ml milk
- 6 egg yolks
- 60g cake flour
- 20g cornstarch
- 1 tsp vanilla extract
- 6 egg whites
- 100g granulated sugar
- 1/4 tsp cream of tartar
- Confectioners’ sugar, for dusting
- Fresh strawberries, for garnish
Instructions
- Preheat the oven to 320°F (160°C).
- In a heatproof bowl, melt the cream cheese, butter, and milk over a double boiler. Remove from heat and let it cool.
- Whisk in the egg yolks, then sift in the cake flour and cornstarch. Add the vanilla extract and mix until smooth.
- In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and gradually add the granulated sugar. Continue beating until stiff peaks form.
- Gently fold the egg white mixture into the cheese mixture in three additions.
- Pour the batter into a lined cake pan and tap gently to remove air bubbles.
- Place the cake pan in a larger baking pan. Fill the larger pan with hot water to create a water bath.
- Bake for 1 hour, then turn off the oven and let the cake cool inside for another hour.
- Remove the cake from the oven and let it cool to room temperature before chilling in the refrigerator for at least 4 hours.
- Dust with confectioners’ sugar and serve with strawberry sauce and fresh strawberries.
