Ingredients

  • 60g unsalted butter
  • 100ml milk
  • 6 egg yolks
  • 60g cake flour
  • 20g cornstarch
  • 1 tsp vanilla extract
  • 6 egg whites
  • 100g granulated sugar
  • 1/4 tsp cream of tartar
  • Confectioners’ sugar, for dusting
  • Fresh strawberries, for garnish

Instructions

  1. Preheat the oven to 320°F (160°C).
  2. In a heatproof bowl, melt the cream cheese, butter, and milk over a double boiler. Remove from heat and let it cool.
  3. Whisk in the egg yolks, then sift in the cake flour and cornstarch. Add the vanilla extract and mix until smooth.
  4. In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and gradually add the granulated sugar. Continue beating until stiff peaks form.
  5. Gently fold the egg white mixture into the cheese mixture in three additions.
  6. Pour the batter into a lined cake pan and tap gently to remove air bubbles.
  7. Place the cake pan in a larger baking pan. Fill the larger pan with hot water to create a water bath.
  8. Bake for 1 hour, then turn off the oven and let the cake cool inside for another hour.
  9. Remove the cake from the oven and let it cool to room temperature before chilling in the refrigerator for at least 4 hours.
  10. Dust with confectioners’ sugar and serve with strawberry sauce and fresh strawberries.
