Scallops with Butter Lemon and Caper Sauce
Ingredients
Scale
- 1 pound fresh sea scallops
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup chicken or vegetable broth
- 2 tablespoons fresh lemon juice
- 2 tablespoons capers, drained
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Pat the scallops dry and season with salt and pepper.
- In a large skillet, heat 1 tablespoon of butter and olive oil over medium-high heat.
- Add the scallops and cook for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the remaining butter and sauté the garlic until fragrant.
- Pour in the broth and lemon juice, then bring to a simmer.
- Stir in the capers and cook for another minute.
- Return the scallops to the skillet and heat through.
- Sprinkle with chopped parsley before serving.
Notes
Serve these succulent scallops with a side of steamed vegetables or a light salad for a complete meal.
