- 1/2 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 medium flour tortillas
- Cooking spray
Instructions
- In a mixing bowl, combine the shredded chicken, shredded cheese, diced bell peppers, diced onions, chili powder, cumin, garlic powder, salt, and pepper. Mix until well combined.
- Lay out the flour tortillas on a clean surface. Divide the chicken and cheese mixture evenly among the tortillas, spreading it out to cover half of each tortilla.
- Fold the tortillas in half over the filling to create half-moon shapes.
- Preheat the air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with cooking spray. Place the filled quesadillas in the basket, ensuring they are not overlapping.
- Cook the quesadillas in the air fryer for 6-8 minutes, flipping halfway through the cooking time, until they are golden brown and crispy.
- Remove the quesadillas from the air fryer and let them cool for a minute before slicing them into wedges.
- Serve hot with your favorite dipping sauce or toppings.
