Ingredients

- 4 thick slices of watermelon
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 4 cups arugula
- 1/2 cup crumbled feta cheese
- 1/4 cup balsamic glaze
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup balsamic reduction for drizzling (optional)
Instructions
- Preheat the grill or grill pan to medium-high heat.
- Brush both sides of the watermelon slices with olive oil and season with salt and black pepper.
- Grill the watermelon slices for 2-3 minutes per side or until grill marks form.
- Remove the grilled watermelon from the heat and let it cool for a few minutes.
