Chocolate Cake with Chocolate Ganache and Raspberries
Ingredients

- 1 3/4 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- Fresh raspberries for garnish
Instructions
- Preheat oven to 350°F and grease two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes.
- Stir in boiling water (batter will be thin).
- Pour batter into prepared pans and bake for 30-35 minutes.
- For the ganache, place chopped chocolate in a heatproof bowl. Heat cream until steaming, then pour over the chocolate. Let sit for 5 minutes, then stir until smooth.
- Let cakes cool, then spread ganache between layers and over the top.
- Garnish with fresh raspberries.
