Ingredients

  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda

  • 2 eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • Fresh raspberries for garnish

Instructions

  1. Preheat oven to 350°F and grease two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes.
  4. Stir in boiling water (batter will be thin).
  5. Pour batter into prepared pans and bake for 30-35 minutes.
  6. For the ganache, place chopped chocolate in a heatproof bowl. Heat cream until steaming, then pour over the chocolate. Let sit for 5 minutes, then stir until smooth.
  7. Let cakes cool, then spread ganache between layers and over the top.
  8. Garnish with fresh raspberries.
