  • 1 tablespoon fajita seasoning
  • Salt and black pepper to taste
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a bowl, coat the thinly sliced chicken breasts with olive oil, fajita seasoning, salt, and black pepper. Ensure the chicken is evenly seasoned.
  2. Heat a skillet or grill pan over medium-high heat. Cook the seasoned chicken slices for 4-5 minutes on each side or until fully cooked and slightly charred. Set aside.
  3. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, black beans, corn kernels, sliced red and yellow bell peppers, and thinly sliced red onion.
  4. Add the cooked and sliced chicken to the salad.
  5. If using, sprinkle shredded cheddar cheese over the salad.
  6. Arrange sliced avocado on top of the salad.
  7. Garnish the salad with fresh cilantro.
