Ingredients

  • 1/2 cup vegetable oil
  • 7 large eggs, separated

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 cup cherry pie filling
  • 2 cups heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 325°F and prepare a tube pan.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, and salt.
  3. Make a well in the center and add oil, egg yolks, water, and vanilla. Mix until smooth.
  4. In another bowl, beat egg whites and cream of tartar until stiff peaks form.
  5. Gently fold the egg white mixture into the batter until fully combined.
  6. Pour batter into the pan and bake for 55-60 minutes.
  7. Once cooled, slice the cake horizontally into three layers.
  8. Whip the cream, confectioners’ sugar, and vanilla until stiff peaks form.
  9. Place one layer of cake on a serving plate, spread cherry filling, then whipped cream. Repeat with the remaining layers.
  10. Garnish with chocolate shavings.
