- 1.5 pounds beef chuck, cut into cubes
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeño pepper, diced (optional, for extra heat)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) black beans, drained and rinsed
- 1 bottle (12 oz) beer (choose your favorite variety)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro
Instructions
- Brown the Beef: Heat olive oil in a skillet over medium-high heat. Add the beef cubes and brown on all sides, about 5 minutes. Transfer the beef to the slow cooker.
- Sauté Aromatics: In the same skillet, add the diced onion, garlic, bell pepper, and jalapeño pepper (if using). Sauté until softened, about 5 minutes. Transfer the mixture to the slow cooker.
- Combine Ingredients: Add the diced tomatoes, kidney beans, black beans, beer, chili powder, cumin, paprika, salt, and pepper to the slow cooker. Stir to combine all ingredients.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are well combined.
- Serve: Ladle the chili into bowls and top with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or cilantro. Enjoy!
