Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes and pat them dry.
  2. Pierce each potato several times with a fork. Rub the potatoes with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and black pepper.
  3. Place the potatoes directly on the oven rack and bake for 50-60 minutes or until the skins are crispy and the insides are tender.
  4. Remove the potatoes from the oven and let them cool slightly. Slice each potato in half lengthwise.
  5. Using a fork, fluff the insides of the potatoes. Top each half with shredded cheddar cheese.
  6. Return the potatoes to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  7. Remove the potatoes from the oven and let them cool for a few minutes.
  8. Garnish each potato half with a dollop of sour cream, chopped green onions, and fresh parsley.
