Instructions
- Preheat the Oven & Prepare Tortillas: Heat your oven to 375°F. Lightly spray two baking sheets and arrange three tortillas per sheet, keeping them spaced evenly. Bake for 3-5 minutes, flip, and continue baking for another 2-5 minutes until golden and crispy. Set aside to cool.
- Cook the Beef: In a skillet over medium-high heat, crumble and brown the ground beef until fully cooked. Drain any excess grease.
- Simmer Beef with Seasoning: Stir in taco seasoning and water with the beef. Bring to a boil, reduce heat to medium-low, and let simmer for 10 minutes.
- Warm the Refried Beans: Heat refried beans in the microwave for 1-2 minutes until warm.
- Assemble the First Layer: Spread warm refried beans on one tortilla, add 1/3 of the beef mixture, then place a second tortilla on top.
- Sauce & Cheese Topping: Spread red enchilada sauce on the second tortilla, then sprinkle cheddar and pepper-jack cheese on top, and add fresh toppings.
- Repeat Layers: Build two more layers with the ingredients until you have a three-layer pizza stack.
- Final Bake: Place pizza back in the oven for about 5 minutes until the cheese is bubbly and golden.
