  • 3 Medium Flour Tortillas
  • 1 can - 16 oz Refried Beans
  • 1 can - 10 oz Red Enchilada Sauce
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Pepper-Jack Cheese
  • 1 Roma Tomato
  • 1 Green Onion
  • 1 can Sliced Black Olives

Instructions

  1. Preheat the Oven & Prepare Tortillas: Heat your oven to 375°F. Lightly spray two baking sheets and arrange three tortillas per sheet, keeping them spaced evenly. Bake for 3-5 minutes, flip, and continue baking for another 2-5 minutes until golden and crispy. Set aside to cool.
  2. Cook the Beef: In a skillet over medium-high heat, crumble and brown the ground beef until fully cooked. Drain any excess grease.
  3. Simmer Beef with Seasoning: Stir in taco seasoning and water with the beef. Bring to a boil, reduce heat to medium-low, and let simmer for 10 minutes.
  4. Warm the Refried Beans: Heat refried beans in the microwave for 1-2 minutes until warm.
  5. Assemble the First Layer: Spread warm refried beans on one tortilla, add 1/3 of the beef mixture, then place a second tortilla on top.
  6. Sauce & Cheese Topping: Spread red enchilada sauce on the second tortilla, then sprinkle cheddar and pepper-jack cheese on top, and add fresh toppings.
  7. Repeat Layers: Build two more layers with the ingredients until you have a three-layer pizza stack.
  8. Final Bake: Place pizza back in the oven for about 5 minutes until the cheese is bubbly and golden.
