For the Maple Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Instructions

For the Carrot Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

For the Maple Cream Cheese Frosting:

  1. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  2. Add the powdered sugar, vanilla extract, and maple syrup. Beat until well combined and fluffy.
  3. Once the carrot cakes are completely cooled, spread a layer of maple cream cheese frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  4. Optional: Garnish with additional chopped walnuts or a drizzle of maple syrup.
