- 2 large yellow onions (or sweet onions like Vidalia)
- 2 tbsp unsalted butter (or olive oil for vegan)
- ½ tsp salt
- 1 tsp balsamic vinegar (secret ingredient!)
Instructions
- Slice onions pole-to-pole into ¼-inch thick strips.
- Melt butter in heavy skillet over medium-low heat.
- Add onions and salt. Cook 5 minutes undisturbed, then stir.
- Continue cooking 40-50 minutes, stirring every 5 minutes, until deep golden brown.
- Optional: Deglaze with 1 tbsp water if onions stick.
- Off heat, stir in balsamic vinegar. Adjust salt to taste.
Notes
- For faster caramelization: Add pinch of sugar after 20 minutes
- Storage: Keeps 5 days refrigerated or 3 months frozen
- Flavor boost: Deglaze with red wine instead of water
