  • 8 egg roll wrappers

  • 1 cup fresh or frozen blueberries

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1 tbsp lemon juice

  • 1 egg (for sealing the wrappers)

  • Oil for frying (vegetable or canola)

  • Optional: powdered sugar for dusting


Instructions

  • In a medium bowl, mix softened cream cheese, sugar, vanilla extract, and lemon juice until smooth.

  • Gently fold in the blueberries, trying not to mash them.

  • Place an egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape).

  • Spoon about 2 tablespoons of the filling into the center.

  • Fold the bottom corner over the filling, then fold in the sides and roll tightly. Use a bit of beaten egg to seal the final corner.

  • Heat 1–2 inches of oil in a pan over medium heat until it reaches 350Β°F (175Β°C).

  • Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy.

  • Remove and drain on paper towels.

  • Dust with powdered sugar if desired, and serve warm.
