Ingredients

8 egg roll wrappers

1 cup fresh or frozen blueberries

8 oz cream cheese, softened

1/4 cup granulated sugar

1 tsp vanilla extract

1 tbsp lemon juice

1 egg (for sealing the wrappers)

Oil for frying (vegetable or canola)

Optional: powdered sugar for dusting
Instructions

In a medium bowl, mix softened cream cheese, sugar, vanilla extract, and lemon juice until smooth.

Gently fold in the blueberries, trying not to mash them.

Place an egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape).

Spoon about 2 tablespoons of the filling into the center.

Fold the bottom corner over the filling, then fold in the sides and roll tightly. Use a bit of beaten egg to seal the final corner.

Heat 1β2 inches of oil in a pan over medium heat until it reaches 350Β°F (175Β°C).

Fry egg rolls in batches for 2β3 minutes per side, or until golden brown and crispy.

Remove and drain on paper towels.
