For the Beef:

  • Salt & pepper, to taste

  • 1 tbsp olive oil

  • 1 tsp garlic powder (optional)

For the Sauce:

  • 2 tbsp unsalted butter

  • 3 garlic cloves, minced

  • 1 cup heavy cream (or coconut cream for dairy-free)

  • ½ cup freshly grated Parmesan

  • ¼ tsp red pepper flakes (optional)

  • ½ cup reserved pasta water

For Garnish:

  • Fresh parsley, chopped

  • Extra Parmesan


Instructions

  1. Cook Pasta: Boil pasta in salted water until al dente. Reserve ½ cup of pasta water and drain the rest.

  2. Sear Steak: Season steak with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium-high and sear for 2–3 mins per side. Rest, then slice thinly.

  3. Make Sauce: In the same pan, melt butter. Sauté garlic for 30 seconds. Add cream and red pepper flakes, then simmer 2–3 mins.

  4. Finish Sauce: Stir in Parmesan until melted and smooth.

  5. Combine: Add pasta and reserved pasta water to the sauce. Toss to coat evenly.

  6. Add Steak: Stir in sliced steak and heat for 1 minute.

  7. Garnish: Sprinkle with fresh parsley and extra Parmesan. Serve warm.
