I was introduced to Brussels sprouts just recently. Since my husband did not like Brussels sprout I avoided buying them until I read many articles about the health benefit of this little cabbages look alike vegetable.
My husband had a “trauma” with Brussels sprouts because his mom forced him to eat them when he was little and he told me that he would hide the sprouts in his pockets when she was not looking…so just the words “Brussels sprout” will bring him chills…well, I came to the picture and insisted that he should give the sprouts another chance…and try it out again. But before serving the Brussels sprouts I even made him promise that if he did not like them I would not insist and that I would be very upset if I end up finding Brussels sprouts when doing laundry.
To make the long story short…he agreed to try and for my and his surprise, he liked it!!!! I started with this very simple and easy recipe since I did not want to spend too much effort and time until I find out what would be his response to it. Since then, I have made many different dishes by incorporating Brussels sprouts, but let’s start from this one…
Ingredients:
1 – 1 ½ lb Brussels sprouts washed and cut in half
1 small onion thinly sliced
2 – 3 garlic cloves, finely chopped
1 ½ tablespoon olive oil
Salt and pepper to taste
3 tablespoon of thinly cut toasted bacon
Method:
In a bowl add the Brussels sprouts, onion, garlic, olive oil salt and pepper. Toss gently and spread in a oven safe tray.
Bake the Brussels sprouts for 35 minutes at 375 degrees.
Toss the bacon bits and bake for another 5 minutes.
Remove from the oven and serve.
If you dislike Brussels sprout you may want to give this simple recipe a try.

I can totally sympathize with Stan! I had the same trauma with flat beans. Now, I am not crazy about them but I eat them and enjoy them quite a bit! On the other hand, Brussels sprouts are very appealing to me and I love eating them. This is a great recipe because you added bacon which gave them a very tasty and out of the ordinary twist! The only way to enjoy brussels sprouts is to roast the heck out of them. Adding bacon doesn’t hurt, either! I could eat trayfuls of these when they’re prepared nicely as yours =)

I wasn’t forced to eat them but I didn’t love them until I realised that they were more bitter the older they were. Also I tried deep fried ones and they were delicious. I’d imagine that these roasted one would be similarly good!

Great that your husband likes brussel sprouts now! My hubby enjoys them a lot! He is the one who always ask me to buy more. I tried roasting them before and steaming is also good. Today, I tried stir-frying shreds of brussel sprouts and it was good too.

I love these baby “cabbages” – and love when they have just a tinge of crispness. We love them here – so I will make these – no problem. But your husband’s problem reminds me of my many decades with problems with broccoli – until I discovered he doesn’t have to be mushy!
I’m one of the unusual people in the world who always loved brussel sprouts. But I think roasting them like you’ve done makes them so much nicer than just boiling them in a saucepan. I’m sure the garlic and the bacon really bring out their flavour – great recipe!

It is so rare over here, and I just love the crunchy taste of these little brussel sprouts. I have always loved the steamed and braised version, but this roasted version of yours do sound intriguing as well!:p

My mother used to force my sister to sit at the table until she finished her peas. I determined from the start I would never do that to my kids. They had to taste…but if they didn’t like it, they didn’t have to eat it.

I havent met a child who likes or enjoys brussel sprouts. Its a grown up food. our taste buds tend to change while growing up. It was horrible to eat that as child but mum always said how healthy it is. well I am glad nowadays that she cooked healthy for us and I am thin and trim now. anyway.. I think so I have to have some brussel sprouts your way soon enough!
i LOVE brussels. my favorite way is to roast them with evoo or steam them and top on my salads. i like them simple too.
oh my, i had a traumatic experience with food too. my twin and i were picky eaters and we used to hide the food in our mouths. we would take so long to eat that my parents would be long done from the dinner table. then we would throw away the food in our bedroom garbage. after some time we developed gross bugs flying out of our garbage, so my parents found out!!! hahaha. then later on, we used to just give the food to our dog who sat under our feet in the kitchen table. hahahaha i am laughing as i recollect these fond memories!

It’s funny how many people have a Brussells Sprouts aversion and yet, once we roast them and give them a little oomph, most people can be converted. I have had this happen too, many times. Your preparation looks divine and so full of beautiful flavors.

What a story, Juliana. Your husband was such a trooper giving them another try. I do wish our stores would sell them on the stem. They look so cool. I’ve seen them roasted that way stem and all! I actually grew them a while back. They take a long time to grow but they look so unusual while growing. I just may have to give it a go again.

I’ve tried sprouts all kinds of ways and I must admit, roasting is the best way. Of course the bacon is always a welcome addition. Sometimes when I just want a healthy snack I roast them up with olive oil and a drizzle of balsamic vinegar just before they are done and I’m good to go!

I tried brussels sprouts for the first time a couple of years ago- I thought they’d be horrible, after hearing many horror stories about them, but to my surprise, they weren’t all that bad!! haha….I think it really depends on how you cook them (my mum cooks them with plenty of garlic and butter!)- and I bet this version is really delicious!
Yes, unfortunately, our parents who meant well, managed somehow to instill bad memories on certain foods. My worst was…liver!
My Hubby as well didn’t welcome these brussel sprouts. Now however, he finds them acceptable since I roast them with a blend of balsamic and Parmesan. I shall certainly have to give your version a try…and maybe, we’ll be eating them more often ;o)
