Somehow I do not like fresh banana, my hypothesis is that back in Brazil bananas were everywhere, therefore I have a kind of “fobia”, but I like banana in cake, pies, bread…in another word cooked. We always have it at home since my husband likes them and many time we get at Costco…as you can see from the picture, he was not able to take care of the load so I decided to create a dessert with it. I wanted something simple and yet yummie.

Ingredients:

Ripe bananas
Spring roll wrap
Brown sugar
Cinnamon
Butter

Preparation:

Cut the banana in half. In the center of the wrap place brown sugar, cinnamon and 1 piece of banana. Wrap by folding like an envelope.
In a skillet melt the butter and add the rolls, let it brown both sides. Serve with vanilla ice cream.
The combination of the crisp hot/warm banana rolls with ice cream is just delicious…now I look forward to have extra ripe bananas so I have excuse to make the banana rolls.

    They look awesome! I bet they were incredibly tasty along with the vanilla ice cream. I’m not a fan of raw bananas either, and much prefer them cooked or baked.

  4. A restaurant near my house does a version of banana spring rolls with…wait for it…sticky rice. The banana-sticky rice texture combo is divine, as is the dark chocolate dipping sauce they come with. Just some ideas for next time : )

    What a fun dessert! I rarely do much more with bananas than bake them into bread/muffins, so this would be a great change of pace.

    We all have our strange food quirks. Mine is pumpkin. I do not like pumpkin pie. But I love pumpkin ice cream, pumpkin bread, pumpkin muffins, and pumpkin cheesecake. Go figure….. ;)

  33. Oooh, your banana spring rolls are really irresistible. I just bought some bananas today, gotta try out. I have not heard of banana spring rolls, only fritters, great creation and fusion!!! The chinese usu deep fried the spring rolls and I have not thought it’s possible to panfried or shallow fry too, healtier too. If this works out I will make more savory spring rolls in the future as I do not deep dry much at home.

  36. Great idea! Reminds me of a dessert we had at Trader’s Vic. It was spring rolls fried with a banana and some peanut butter! It is a very popular dessert.

  54. One of my favorites! I love how the sugar caramelizes and then the bananas are a bit mushy but still firm and sweet. Ice cream on the side makes this an absolutely perfect dessert! I think I need to pick up some bananas . . .

  62. I love fresh bananas but they have to be pretty fresh – don’t like them when they start to turn more ripe. I always have ones past their prime in the freezer for banana bread, but this looks an amazing alternative to that. Will definitely have to give this a try. Thanks for sharing!
