This is a very simple and easy meal, you have the carbs, the protein and the fibers all in one plate. When I made this dish, my husband comment was kind of funny: “I don’t know what it is, but sure looks nice”, after he tasted the polenta and sausage he mention that is was really good, even repeated :-)

Ingredients:

Polenta
1 ½ cup corn meal
2 cups chicken broth
1 chili finely chopped
1 tablespoon butter
Salt to taste

Sausage
2 Kielbasa sausage (or any of your preference)
1 small onion
½ cup parsley, chopped
2~3 cups of broccoli
½ tablespoon light soy sauce
½ tablespoon olive oil

Preparation:

Polenta
Boil the chicken broth and add the corn meal, mixing gently, add the chili, salt and the butter. Cook for a few minutes and the mixture will turn thick. Set aside.

Sausage
In a pan, heat the olive oil, sautee sausage, and remove the sausage once it is slightly brown, in the same oil add the onion. Once the onion is ready add the broccoli, sautee for a minute, add back the sausage, then parsley and the soy sauce. Mix quickly and turn off the heat.

Assembly:

Spoon the polenta in the middle of a plate, by making a small indention in the middle of the polenta. Top it with the sausage and broccoli. Serve warm.

Did you know that polenta was originally made with chestnut meal? In now days, polenta is made mainly with cornmeal. Polenta can be made into various textures, from porridge to hardy consistency. In Brazil, polenta is often shaped into balls or patties and fried, and served in a crispy and golden brown crust.

This is a very easy, simple and quick to fix meal. You can serve this chicken sausages (or any sausage of your preference) with rice or even inside a bun. It is colorful and sure very tasty. I used the chicken sausage with apples, it is great since the apple in the sausage give a slightly sweet taste to the dish.

Ingredients:

4~5 chicken sausages
1 onion
1 yellow bell pepper
1 red bell pepper
Cilantro
Sal and pepper to taste
1 tablespoon soy sauce


Preparation:

Slice the chicken sausage, onion and the peppers.
In a pan sautee the sausage until slightly brown, set aside. In the same pan, sautee the onion and the peppers. Add the soy sauce, salt and pepper to taste. Place back the sausage, mix gently and add the chopped cilantro. Remove from heat and serve.
